The thymus is a lymphatic organ located in the front of the chest that grows large until puberty, after which it gradually degenerates and almost disappears in full-grown cattle.
The thymus is also present in mammals, and in France, a dish made with calf’s thymus is called “ris de veau” and lamb’s thymus is called “ris d’agneau”, and is considered a gourmet dish.
In English, it has the peculiar name of ‘sweetbread’, the etymology of which is unclear, although there are one or two theories. Regardless of the origin, it’s a very awkward name, as the actual thymus dish is not sweet, much less bread.
In any case, thymus has a cult following for its rich, creamy texture.
However, since calves are not butchered in Korea, sweetbread is not available.
