Bulgogi is a Korean dish that consists of thinly sliced beef and pork, marinated in spices and grilled over an open fire.
Along with bibimbap, cold noodles, kimchi, pork belly, and ribs, it is a staple of Korean cuisine, and is one of the world’s favourite Korean foods because it is a seamless blend of savoury, salty, and fiery flavours that are preferred by all cultures.
It can be assumed that bulgogi was similar to Neobiani(thinly sliced beef, slashed on the front and back, seasoned and grilled thinly) from the Joseon Dynasty until the 1940s.
It is believed to have changed to its current form with broth sometime between the end of the Japanese occupation and the Korean War.
