Pork Terotero are the lower rectal part of the pig’s large intestine. It”s very fatty and chewy. Even though the amount itself is small, it is quite fatty, so you will feel full quickly.
They are blanched in boiling water and grilled on an open flame. Unlike daejang (stir-fried giblets), which are almost always grilled with strong seasoning, Makchang is very flavourful and delicious even when grilled without any seasoning, thanks to the large amount of fat. It is usually dipped in simple seasonings such as gochujang, makjang, and salt and eaten with rice. Like other grilled meats, it is often eaten as a snack with alcohol.
