ToSiSal(Beef Hanging Tender), located next to the tenderloin, is as tender as the thin skirt, allowing you to enjoy the full flavor of the beef.
In Korean, it’s called Tosishal, named for its resemblance to a traditional arm warmer, or “tosi.”
Each cow yields only about 550 grams of this cut, making it an expensive option.
Tosishal is less fatty than other beef cuts, making it ideal for grilling.
It is softer and darker in color compared to rib meat, and offers a richer flavor with a chewier texture.
