등심(서로인) – NZ Angus Beef Sirloin, 50mm Korean BBQ Cut
Produced at around 8kg per cow, Sirloin comes from the end of the loin.
Because it’s the least mobile part of the animal, it has less intramuscular fat, making it quite tender.

Along with the tenderloin, it’s the most tender cut, and it also boasts some of the most spectacular marbling of any cut.
