What is Top Loin Piece(GabriSal)?
The Pork Top Loin Piece is the part of the pork that connects the neck to the loin. It’s a specialty cut that only yields about 200-450 grams per pig.
The name of the meat comes from the Japanese word “kaburu”, which means “to cover”. It is not related to the Western words Gabriel and Gabrias.
Although it has a similar flavor to pork jowl meat(HangjeonSal), Top loin piece is a deep crimson color, which compares to the lighter color of jowl meat.
