Pork Jowl is the part of the pig from the collar to the shoulder.
The character 項 (Hang) is in Chinese characters, so it’s probably a Chinese word, but it’s not confirmed.
It is now a very high-end cut, but in the past, it was not well known, so Chinese restaurants in Korea used it a lot for hot and sour pork. Even today, there are still some high-end Chinese restaurants that insist on using it for hot and sour soup.
It is also a favorite cut of meat in Europe and the United States, where it is often fried or grilled as it is in Korea, but it is most commonly used for salting bacon.
