Produced at around 8kg per cow, strip loin is the very end of the sirloin.
Because it’s the least mobile part of the animal, it has less intramuscular fat, making it quite tender.
Along with the tenderloin, it’s the most tender cut, and it also boasts some of the most spectacular marbling of any cut.
