Daechang is the large intestine of a cow. Each cow yields about 2 kilograms.
Compared to Gobchang(small intestines), it has a lot of fat on the outside. However, when you eat it, the fat is actually inside.
This is because the fat is processed by turning the outside and inside of the Daechang inside out with a long stick, like turning a sock inside out.
The most common way to eat it is to marinate it in a marinade of soy sauce, chili powder, and water chestnuts, and then grill it over charcoal.
Usually grilled with seasoned leeks and onions, the flavour is savoury and chewy. They are more expensive than small intestines. Both small and large intestines can become tough or mushy if overcooked. They should be grilled quickly over high heat for the best flavour.
