Beef Shin meat is the leg of a cow. It’s mostly made up of fluffy lean meat, and its firm texture makes it a popular choice for braising.
However, the inner muscle of the leg, the Arongsatae(beef heel muscle), is marbled and chewy, making it a high-quality ingredient for beef yukhoe(raw beef sashimi) or grilled meat.
